TONGUE SOLE FISH

    Tongue sole is a bottom-dwelling flatfish with both eyes on one side and camouflaging skin that shifts from muddy brown to pale white.

   Its tender, mildly sweet flesh is boneless and rich, perfect for sour soup, stews, pan-frying, or porridge. In Japan, it’s favored by mothers who believe it boosts children's brain development.

    Main spawning seasons are April and October.
